  • 200g Dark chocolate (60-70% cacao)

  • 150g Fresh raspberries (plus extra for garnish)

  • 1 cup Thickened cream

  • 2 tbsp Icing sugar sugar

  • 1tsp Vanilla extract

  • A pinch of salt

Garnish:

  • 1 cup thickened cream

  • 2 tbsp icing sugar

  • 1/2 tsp vanilla extract

  • Gold leaf

  • Edible flowers

  • Dried raspberries

Instructions:

  1. Melt Chocolate: Break the chocolate into pieces and melt gently in a heatproof bowl over a pot of simmering water (double boiler), stirring occasionally until smooth. Remove from heat and let it cool slightly.

  2. Whip Cream: In a separate bowl, whip the heavy cream, powdered sugar, vanilla extract, and salt until it forms soft peaks.

  3. Blend Raspberries: Puree the raspberries using a blender or food processor until smooth. Strain through a fine mesh sieve to remove seeds.

  4. Fold Together: Gently fold half of the whipped cream into the melted chocolate until no streaks remain, then fold in the raspberry puree. Finally, fold in the remaining whipped cream until the mixture is smooth and uniform.

  5. Chill: Divide the mousse into serving glasses and chill in the refrigerator for at least 2 hours, or until set.
